Heirloom Tomato, Nectarine, Mozzarella & Blackberry Salad with Sweet Basil Pesto
Presented at my last catered affair – a birthday celebration for a close friend – before closing my kitchen.
No “dressing.” Just great olive oil, crunchy finishing salt, the natural flavors of the perfectly-ripe tomatoes, stone fruits and berries, the freshest mozzarella, and a drizzle of quality basil pesto!
Always remember: cooking doesn’t have to be complicated. Simply choose the best, freshest, local, seasonal ingredients, surrounded by complimentary flavors that will accentuate, not mask the natural flavors present in foods. Pay attention to colors, textures, and overall plating. Use your imagination, be creative, but don’t go crazy overboard! Simplicity is key!
